I've just come back from Guardalavaca and wish that i was still there. The hotel itself was lovely, as is Cuba. Having been to other third world countries it made a refreshing change not to be hassled every 5 minutes for money- the locals were friendly and even in Havana we were hardly pestered.
Guardalavaca is a nice town, however there is not a huge amount to do there- there is a market and a few shops(they were building a new shopping complex- should be there soon!) and a nightclub. La Roca is a good club- but make sure you can salsa before going there as they play predominantly salsa music!!
I recommend that you go horseriding -you can go along the beach and through the countryside, and it is a way that you can experience the real Cuba- not just the touristy bits! For an hour it was just $4! Swimming with the Dolphins is also good, and if you need to relax I would definately suggest the Catamaran cruise.
Las Brisas offers loads of activities during the day (volleyball, tennis, pool competitions, salsa & spanish lessons etc) and the nightclub is good fun (Jimmy the DJ has a very "unique style"!! but plays good music).
Cuba (and Las Brisas) is definately worth a visit!
